Whether a particular variety that can ripen with astringency, will actully
do that in your location depends quite a lot on whether you having
sufficient growing degree days. I know that John Rick will ripen in
Central Illinois. If you can get them to at least start to change color
you should be able to finish ripening in a brown paper bag. The problem
with ripening them individually, after picking, in the open is that their
ethelene disperses and because of their size they tend to dehydrate rather
than ripen. The ripening should take a week or less starting from fresh
picked fruits that are in good shape and starting to turn color.
