Hi Alex,
Yes, you can substitute wood.
You want to leave the xylem (soft wood between the cambium and heart wood) which continues to feed the leaves and they make the sugars that normally are fed back to the roots via the phloem which is located between the cambium and bark. Removing the bark removes the phloem which blocks the return path. So the sugars build up where the cut was made and in some species these sugars develop into roots. IBA helps.
