Most of England is in US zones 8-9 and you live in much colder
Quebec. The gourmet apples developed in England probably are not
going to survive Quebec winters. Canada has good apple varieties.
Go to the nurseries in your area and ask what will grow there. Get
stock that is on really hardy rootstock. Russian rootstocks are
great for the cold. You can try to plant more tender apples but what
usually happens is the tree will live for a few years and suddenly
die during the winter.
