I am in Zone 6. We cover the
carrots with some straw and dig them through the winter. We dig up the

some to plant? And, for those with
experience – we can often just leave potatoes, carrots, etc. in the
ground here in zone 8-9. Does Yacon store all right that way? And lastly, I saw
Yacon syrup at Whole Foods yesterday. I had no idea it was even

Behalf Of Naomi Counides I planted Yacon for the first time this
year. We have had enough of a frost to burn the tips. It has not
flowered yet. It did get 3 feet high. Will tubers be mature enough
to plant next year? I have not dug it up yet. Naomi
