Jujube fruit do not like humidity during the
last stages of ripening and will crack even if it has been dry and you get a
rain around ripening time. There are cultivars that have less trouble with this
than others such as Abbeville, and Silverhill/Tigertooth but they are not as
sweet as some. It seems from a purely antidotal viewpoint that the sweeter
cultivars have more problems with cracking in high humidity. I am aware of no
remedy. But the fruit are good even if they crack for processing or
drying.
