How do olives fare outside of Mediterranean climate zones? I know some
other Mediterranean plants don't like other climates. Rosemary, for
example, grows rampantly here in the CA Central Valley, but is difficult
other places.

European olives are not cold hardy enough for your zone 7. If you lived in
zone 9 or possibly 8b you would have a chance of growing them.
I think it is better to state the facts than have you learn the "hard way."
