Hallo Richard, Hallo Michael,
Elstar is a very much planted and sold apple in Germany, but usually only at plantations and this has reasons.
It is from Golden Delicious x Ingrid Marie and came from Netherlands 1978
Strong growth,
bloom = middle to late,
picking = middle September,
eating = end of September till December,
harvest = medium till much
taste = sweet with nice acid, strong aroma (taste)
diseases = to make it short, I can say = all medium till strong!!!
frost damage possible but regenerate well
I think this all makes it to a nice apple only for plantations with much pesticides!
8 additional variations from Elstar (also Valstar) are known at Europe.
ciao

I don't know about growing it, but I consider it a
very nice eating apple. There is an Oregon grower who
grows it organically so it probably doesn't have too
many problems. It's a seedling of Golden Delicious
crossed with some European apple, but it has more
flavor than GD. I think it was bred in the Netherlands
many years ago.

Is anyone familiar with the Elstar apple from
France? Van Well Nursery is selling a sport of it
