Persimmon are as easy to graft as apples, getting 80% to 90% success all the time.
I'd suggest you are grafting slightly ahead of the slip. Wait until new growth has activly begun with 2 to 3 inches of new growth. The bark will now be well into the slip.
Also make sure to match the cambiums. Vitally important.
If bark grafting, cut off the rootstock entirely. Do not leave limbs as the understock will favor it's own limbs over the ones you take to it. Then as Lucky wrote rob off all new shoots on the understock about two weeks after grafting.
Persimmon are easy to graft! Try again.
