My experience is until the understock goes out of the first slip. With persimmon in Indiana that is about mid July. However the earlier the graft is done in the season, the greater growth the first year (first leaf).
There is a second slip in the fall, but don't recommend bark grafting then, although it might well work to some degree. Bud during the second slip.
