Cider is only correctly used for the fermented beverage although Prohibition
changed the common use toward the softer end of the spectrum. If you're
speaking to a cidermaker, cider=hard cider. Apple juice is the unfermented
product. The exact linguistic parallel would be grape juice to wine.

Likewise, perry is fermented pear juice.
