Hi, Doreen (and berry lovers)

Here's the recipe from "Southern Sideboards", Jr. League of Jackson MS, 1978:

Pyracantha Jelly

3 pounds pyracantha berries, or more
4 Tablespoons lemon juice
5 Tablespoons vinegar
7 cups sugar
1 box Sure-Jell (1 3/4 oz box)

Pick pyracantha berries when deep red.  Wash, remove stems and place in a large pot.  Add 1 cup of water for each pound. Boil for 25 minutes or until berries pop open.  Drain in dampened, double-thickness cheesecloth bag. (The clearest jelly comes from dripped juice without pressing the bag, but yield of juice can be increased by pressing bag when the dripping stops.)  Measure 3 cups of juice.  Mix the juice and vinegar with the Sure-Jell.  Bring to a hard boil, stirring occasionally. Add the sugar all at once.  Bring to a hard rolling boil for 1 minute, stirring constantly.  Remove from heat and skim off foam.   Pour into jars, leaving 1/2 inch head space.  Seal or cover with 1/8 inch hot paraffin.  Cool and store.  Yield: 7 half pints.  Mrs. James Wheeler
