I never saw a groundhog before. They are not in South LA. as far as I know. Guess they don't like the low land here. That's the only reason I never roasted one before ...ha ha. But nutrias are mighty fine.
As far as suckers (carp?) go, I have eaten them and they are really full of bones. We had a fish fry one time and had a bunch of those included, but no one really went for them too much. Too many bones. They tasted pretty good tho...lots of catsup!!!ha
