Hello,
Sounds like you have the right idea for a grafted tree.
I did learn something new about grafted roses... Bury the graft union below
the soil level. It doesn't matter on roses if if the scion
roots.
However, in fruit trees you do not want the scion to root, so keep it above
soil level. You are doing fine
