You can start scouting for apple sports anytime so they are handy.

"Timing
In Michigan, bridge grafting is best done in May, when the bark is slipping.
Scion wood used for grafting must be collected by now, while it is dormant, or
earlier in
the winter and stored until usage. Collect scion wood from the most hardy and
fireblight resistant varieties of apple and pear.

For apple, the best varieties are Red or Golden Delicious, Northern Spy,
McIntosh, and Empire. Seckel, Kieffer and Old Home are the best for pear.
Scion wood, as for any grafting, should be selected so that it is straight,
from previous season's growth, cut into 12-15 inch lengths, and preferably
from healthy, disease-free,
young (less than seven years old) trees."
