We have a few in the rural areas around Houston.
I came across one while riding last weekend.
 
The best course of action that I know of is to keep your mount calm.
And move away at a 45 degree angle, don't turn your back on it.
 
Be prepared to defend yourself and your mount.
 
The probability of a cougar attacking is pretty slim as you make some strange noises
as you ride and look like something they have never seen.

I am writing this to ask the people in the western states where  there are cougars what the best action or reaction riders should take if they come in proximity to a cougar.  I work in a park in the Midwest and there have been many recent and reliable sightings of this cat.  This is an extreme rarity in this area and I don't know how to inform riders how to  handle this situation.  T.
