We try to get all of ours dug prior to any frosting.  We've had some that got hit by sub 40F temps and I think it all depends on how much close the junction between the stem and the root is to the surface.  Browning of leaves should not be an issue its soil temp that is the key factor.  If the portion of the stem that contains color and flavor (now it should be yellowing rather than pink/white) gets frozen and frosted it will start to turn south.   We've been selling the grass/bottom portion of the stem though so we harvest prior to frost…both ginger and turmeric.

Anythign that is sort of mealy we simply cut out and use it on farm to either dehydrate or candy.  YUM.  The candied baby ginger is just about the best thing in the world (as is the left over syrup) and the powder is going into my bacon cure.

The rest is already sold out.  Figuring out right now how we are going to source our ginger this year with the fall out between the Ginger Dude and East Branch.  With the mess up this year we resorted to purchasing stock from Wholefoods and worked better than the seed stock we got.

My ginger tops in the tunnel have been frosted.  Do I need to dig immediately to prevent problems moving down the stem, or can I concentrate on carrot harvest?
