I also pull them as I don't believe they will "regenerate" ("grow back"). I plant at least three 200 foot beds (3 rows per bed) specifically for "green garlic" in the fall. We've got three tasty green garlic recipes on the recipe page of our website : http://www.turtle-farm.com/Recipes/index.htm . Feel free to share them with your customers. Another way I like to fix them is to wrap broccoli raab and then local bacon (which makes everything better : ) ) around them held together with a toothpick and then put them on the grill till the bacon is cooked. I sell them 3 for a dollar.

I pull them and bunch them complete. When they are young and tender I tell people the premature bulb is straight white meat and can be used just like a scallion, tender right up the stalk. I love them and they sell well at our market. 5-6 to a bunch for $2.50-$3.00.
I'll keep moving the small ones like that till they get tough and start to clove.

Last fall I saved my too-small-to-plant-for-bulbs garlic cloves, and sowed them thickly this spring for garlic greens. They are about 6" tall now, and delicious. When is the right time to harvest them? Do I cut them off at the ground, or pull up the whole plant? If the former, will they grow back? How do you suggest customers serve them--raw? cooked? in salad?
thanks.
