I agree with the market estimates by the prior writers. You are working with 5% of a population, with adjustments for cultural differences. Our Market towns are 125,000; 40,000; and 5,000(tourist town). The number of "buying" patrons each week is almost identical at each stop. It takes all 3 to sell out, and we do every week! None of the smaller communities have been able to get a sustainable market and few farmers make it without doing 1 or more of these 3.
In other words, I'd say we are at the bottom of the threshold, population wise.
As far as converts from 'factory food', that is probably 2% of sales and I find it a waste of my time to prosletize (sp?).
