Last year I direct seeded Spinach on October 5th, in North Central Kansas Zone 5 and started to harvest a few leaves a month later. It was the darkest and coldest October I can remember.  It produced all winter long. It was inside at 12 by 18 tunnel.  This year I am stepping up and planted a month sooner, to start harvesting in early October.  I also started a bunch inside to transplant in late September/Early October.

Here is an research article about the spinach planting dates.
