Good morning!
I went to the local restaurant supply house and bought a couple of
inexpensive hanging thermometers (actually for use in restaurant
refrigerators) for about $1.00 each. I hang one off of the strap hinge
inside the case so the inspector can have easy access to a temp reading.
I usually pack a couple of frozen blue "icees" in the night before to
cool the chest down. Next morning I pack in my refrigerated eggs
(already at 45 degrees or less), along with a couple of fresh frozen
"icees". I've been able to keep temp for up to 4 hours in the blaze of
Texas summer heat.
