I agree about the difficulties and additional time and handling in bagging up pints/quarts.  We have gone to lining the quarts with plastic food-grade bags, then fill the quarts and pull the plastic over the edges of the quarts.  When the customer brings it up to the cash box, you just grab the top of the bag and pull up.  A quick twist of the wrist, spinning the bag and close it with a 'quick-loc' (like on some bread bags.  Yes, the plastic bags are more than paper, and the quick-locs' are another expense but the time saved is well worth it.

We don't have much trouble with farmers market customers abusing
berries.  The attraction of clamshells at farmers markets is
transaction time.  Open top pint baskets are time consuming to dig out
of the flats and bag.  With clamshells, the customer can serve himself.
If you are doing a couple of flats it is not important.  For berries,
our peak market last year was about 30 dozen and we had quite a few in
the 10-20 range.

Customer abuse on tomatoes and peaches is another story.  We are just
starting peaches and we have customers that want to squeeze each peach
within their reach.  Here is something I intend to try:
Make a sign:
"Sacrificial Peaches"
"Feel free to squeeze, bruise, and abuse ONLY these peaches"
And then place a few peaches near the sign.
