ATTRA has a publication titled Sprouts and Wheatgrass Production.  Just call 1-800-346-9140 to request a free copy, or look for it at the Web site <www.attra.ncat.org>.  And I'll bet he called it Kansas Wheat Grass just cause Kansas is the land of wheat, of course!
