Fresh chicken manure is too hot for plants and needs to be composted before use as a fertilizer.  The actual NPK values vary with the age of the birds, what they eat and how old the manure is.  My brother-in-law is using composted chicken manure this year on his gardens for the first time and is ecstatic about it.  The manure he got was from his daughter's chicken 4-H project.  I recommend you read Storey's Guide to Raising Chickens by Gail Damerow.  Fertilizer info is on p. 249.
