While studying food bourne disease as Chef apprentice, I began to question
the primary ingredient. Water....water becomes the primary issue, 98% of
everything. The water that irrigates, washes, flushes, cleanses,
contaminates. The chemical residues of the non-organic practices
insidiously finds its way into the farthest reaches. Hydrology and water
quality testing allowed us to track contamination from field to stream to
table. What can I say I found it fascinating and at the time actually
thought I could make a difference. Sora, now out of the field and happily
