Try mache in the winter--it's very sturdy.

I agree with trying Mache, or other wise known as Corn Salad. I have 3
varieties of it and it is very hardy up here in Zone 5. Granted, it may not
grow through one of our winters, but if you keep it in a hoop house, it
should do fine. Elliot Coleman suggested it in his book 4 Seasons or
something close to that! I read it and he grows it along with many others.
It is very tasty too!
