This question is for any of you out there who raise & dress chickens for market:
I have done LOADS of research to find out how to go about this legally, but have had very little success. I have contacted our State Dept of Ag, who tells me they know nothing about this. I have called the State Dept of Health, who doesn't return my calls, & I have read our state statutes a dozen times. Basically, in TX, according to our statutes, we can process & sell (directly to the public) 10,000 chickens, game birds, rabbits, etc. per year without being USDA inspected, but must register with the Dept of Health, & be inspected by them if there are any complaints. We must also have on-hand a "sanitary operations procedure". I can handle these two things, already downloaded "procedure" from the web, but is it REALLY that simple? Is there anything else I should know? I just know that the first thing that's gonna happen, is the local grocery stores are going to get wind of my selling fresh meat & call in a phony complaint.
I would greatly appreciate any links or advice anyone can give me or even send me privately. I just want to know how to do this without opening myself to unnecessary liability.
