Water with ordinary vinegar (5% acidity) to lower the pH quickly. Do
it for a few days running and after that, at least once a week to make
a significant difference (8 to less than 7 is significant). You can
test but it takes a couple of weeks to get a really accurate reading
when you are reducing alkalinity.
I don't know if it will work quickly enough to save the spinach, but
I'd give it a chance--I wouldn't pull the spinach for at least a week.
