I have a client who is not interested in paying premium prices for leaf
lettuce but will pay about $1.25 each for baby size iceberg, and/or romaine
types. The chef said that he had heard that the baby lettuce heads required
"selected trimming" while the heads were growing to enhance their shape.
Anyone ever heard of this "trimming" and/or does this make sense? I am not
looking for any additional work.
