Though cauliflower is the same species as cabbage and broccoli, it really is
more tender. It's also important to know that when cauliflower goes through
cold stress it can sometimes be preconditioned to flower prematurely even
though it looks like a normal transplant. You'll plant those transplants
out, they'll look fine for 3-4 weeks and then you'll find tiney heads
forming in really small plants. Quite a disappointment. Rule of thumb is to
baby the cauliflower but not the other brassicas.
