If you have a rooster among your hens, you will need to refrigerate as soon
as possible any eggs you sell, and keep them continuously refrigerated. If
not, your customers may have some unpleasant discoveries when they crack an
egg open that has blood in the embryo, or, even worse, a partially developed
chick.
If you have no rooster, you should still refrigerate eggs that have been
washed, as they have lost their natural protective coating/sealant.
Refrigeration slows down the deterioration of the quality of the egg.
