It's even worse that just "organic".
Look at what Joel Salatin is fighting - a government who will let him
process his own chickens and turkeys on-site, but won't let him process
his cows.
He was able to prove to the USDA - their testing - that his facility was
TWENTY-FIVE times cleaner than the certified USDA butchering facility
down the road. Joel's point: clean is clean. And that's right. But
he still can't process his cows at Polyface - he has to use the
USDA-approved facility, though it can't meet Salatin's standards of
cleanliness. They just happen to have a piece of equipment the USDA
mandates they purchase.
This is another way ag. policy has enslaved the rural population: it's
priced them out of the game.
