I float them upside down in ice water tubs, give a very gentle up and down motion to fluff the leaves and let the dirt fall out, the sling the water out and pack in boxes to drain in the walk-in cooler.

For market i do cut greens and heads of leaf lettuce. I have no problem processing the cut greens ( i use the www.attra.org method with the laundry bag) but with the heads of leaf lettuce it seems i could be doing it more efficently. Right now i just cut it, pick off the bad leaves and dunk it bottom first to stop breakage of the leaves. This method leaves alot of water in the head and i drip dry it. What do you do?Thanks,adam---
