These are great cookies....maybe your customers
will enjoy the recipe when you sell your cinnamon (or lemon, or lime)
basil
From the book Southern Herb Growing (a must for
gardeners in the Southeast) by Hill and Barclay
Sift 3 cups flour, 1 2/2 teaspoons baking pwerder
and 1 1/2 teaspoons salt. Set aside.
In large mixer bowl, beat 2/3 cup softened butter
or margarine, and beat in 1 cup sugar, 1 teaspoon vanilla, and 3 TABLESPOONS
FRESH CINNAMON BASIL chopped ,
plus 1 tablespoon finely chopped lime peel.
Beat until light and fluffy.
At low speed, beat in dry ingredients and mix in 1
cup chopped pistachios (or walnuts, etc.) by hand.
Turn out dough on lightly floured surface, divide
in half, shape each into a roll 6-7 inches long, roll in plastic wrap and
refrigerate until firm, at least 8 hours\\ (You can also freeze
dough)
Preheat oven to 375, cut dough into 1/8 inch slices
and bake on ungreased cookie sheet for 8-10 minutes. DO NOT OVERCOOK, just
until lightly browned.
THEY ARE DELICIOUS.
We used the cinnamon basil in wedding bouquet and
flower arrangements as well. Made people VERY
happy!
