I find garlic is super easy to peel if it is dry roasted first. You can doi
this either in a heavy frying pan or in the microwave. Heat a pan over med
heat and put in as many cloves, still wrapped as needed. Let them cook,
stirring often, untli they brown and smell like delicious garlic. remove,
cool and they will slip right out. The garlic is sweeter when cooked and
imparts a nice mild smokey flavor (at least our hardneck does), which works
well in the fresh salsa I make and should be fine in canned salsa.
