I've done that many times. You might as well leave two because the second
head is never as big as the first. Different varieties will respond a little
differently so experience will help a bit. Some will produce three nice, but
small, heads. Sometimes they'll work better in the market. Some customers
prefer small heads because there are only two consumers at home and they
just want to make fresh slaw or a serving of boiled cabbage.
