We will have to wait at least a month for any of these vegetables to reach our table. We still have night frost here every so many days.
But we have our own Spring specialties. Steamed stinging nettles today here for the first and not the last time this year I hope.
Yesterday we had Alexander (Smirnium olusatrum) roots which are really delicious. Alexanders are a vague celery relative with strongly tasting leaves that were grown in monastic gardens all over Europe during the Middle ages and they are often the only plant that survived in those locations after hundreds of years of neglect. The roots can be really big in comparison to the rest of the plant; more than 2 inches thick and a foot and a half long.

They don't just taste good. These green spring vegetables can fortify your immune system, strengthen your bones, and ward off hangovers.
