I'm surprised he didn't test the best-tasting paste tomato I know: Opalka. A great tomato fresh or cooked.
Furthermore, many oxheart tomatoes have the same qualities that make paste tomatoes good for sauce: They're solid with few seeds. But oxhearts tend to have superlative flavor and are often much larger than paste tomatoes. The only downside is that oxhearts have lower production.
This year, I'm growing a bunch of oxhearts: Anna Russian, Orange Strawberry, Cuor di Bue, Kosovo.
