Arracacha (Arracacia xanthorrhiza) is another Andean root crop people may be
interested in. It is used a lot in Colombia and is rapidly spreading to
other parts of Latin America. In Southern Brazil it is being planted on a
large scale. I can say from experience that this one is a winner for flavor
and it contains an easy to digest starch, lots of calcium and most likely is
high in Vitamin A. it is unproven at higher latitudes but if they can grow
it Southern Brazil it at least has the potential to adapt.
