Seventy-six million Americans get food poisoning annually. Of these,
325,000 require hospitalization and 5,000 die. This occurs even though the
U.S. Department of Agriculture inspects about 6,000 food plants each year,
collecting and testing about 90,000 samples. Yet USDA officials have pushed
the idea of inspecting only plants with poor safety records and allowing
others to submit records by fax. Consumer groups are understandably
concerned that this could allow food producers to avoid oversight,
particularly in light of the fifth national recall of meat due to E. coli
bacteria in four months.
