You mean besides the exact chemical make up and physical form?    Basically the trace minerals.   
 
Milk will have a protein component to it that add nitrogen and bit of sulfur among other things.    As a source of Ca, it is primarily water, so a 1 lb of milk will have less Ca than 1 lb of ground limestone.    Egg shell will have a protein component to it as well, but, less than milk, but, more Ca for 1 lb than milk.
 
Calcium nitrate, is calcium and nitrogen, and for all practical purposes lacks any significant trace elements, other than what made it through in manufacture.
 
Limestone is mainly calcium, carbon, and oxygen, with various trace minerals depending on how it was formed, and how it was treated before you obtained it.
