Lovely Lavender

If I could have only one plant in my yard, I would choose lavender.
This wonderful bush came into my life when we purchased a home with
a front flowerbed of perennials and two gray-green shrubs. It wasn't
until June, when the bushes sprang into full glorious purple bloom,
that I recognized the plants.

There was no mistaking their identity. One whiff of the subtle
fragrance, and I was whisked back to my childhood and memories of a
favorite "auntie" to whom we always gave Yardley's English Lavender
toiletries. That first spring I cut the flowers, dried them, tied
them in bunches, laid them in the linen closets, tucked them in dry
flower arrangements and scattered sprigs everywhere I could. As I
worked with my lavender plants, I discovered the foliage of the
shrub is as fragrant as the flower. A gentle shake or a fond pet of
the plant releases the fragrance from early spring to frost.

Lavender for the bath
The Ultimate Lavender Bath Treatment
4 cups epsom salts
2 cups Sea salt
1 cup non fat dry milk
2 cups oatmeal, ground to a very fine powder in a food processor or
old-fashioned coffee grinder
40 drops of lavender essential oil

Mix the dry ingredients together in a large bowl. Add the lavender
oil 10 drops at a time, mixing thoroughly after each addition.

Basic Lavender Bath Salts
Children enjoy making this easy recipe to give as gifts. An adult
should measure the essential oil and food coloring for a small
child.

1 cup Epsom Salts
1 cup sea salts
15 drops lavender essential oil
5 drops food coloring

Place all ingredients in a clean, dry jar. Screw the lid on tightly
and shake until all ingredients are blended. Place in glass jars or
cellophane bags and decorate with lace and ribbons. Kids enjoy
making their own labels.

Lavender Massage Oil
Combine 1 cup sweet almond oil, oil from 6-8 vitamin E oil capsules,
and 20 drops lavender essential oil. Add dried lavender buds if
desired.

Lavender Recipes
Lavender Ice Cream
14 oz Milk
3 oz Lavender leaves and flowers
2 oz Crystallized ginger, chopped
1 c Sugar
3 Egg yolks
2 c Heavy whipping cream, cold
Lavender flowers for garnish

In a saucepan, slowly heat milk to approximately 200 F. Remove from
fire and add lavender. Allow to steep for 15 minutes. Strain milk
through cheesecloth while warm. Add crystallized ginger and sugar to
milk. Place egg yolks into a small bowl; then put half the mixture
from saucepan into the bowl to blend. Stir mixture with a spoon and
pour back into the saucepan. Place over low heat and cook until
mixture is approximately 200 F. Add 2 cups cold heavy whipping cream
and place into refrigerator until well chilled.

Process in an ice cream freezer. During the last few minutes of ice
cream processing, sprinkle in individual lavender flowers stripped
from lower heads. Makes 1 quart.


Pears with Lavender and Pepper
1 tablespoons fresh lemon juice
2 large ripe Bartlett pears, peeled
1/8 teaspoon lavender, crumbled
1/2 teaspoon coarse cracked black pepper

Sprinkle the lemon juice over the pears. Combine the lavender and
pepper and sprinkle over the pears. Serve on a plate with a knife
and fork. For a heart-healthy desert, stop here, but this is really
good with a small wedge of Italian Fontina or other semi-soft
cheese.


Lavender Herb Bread
1 package active dry yeast
1/4 cup warm water
1 cup low-fat cottage cheese
1/4 cup honey
2 tablespoons butter
1 teaspoon dried lavender buds
1 tablespoon fresh lemon thyme
1/2 tablespoon fresh basil; finely chopped
1/4 teaspoon baking soda
2 eggs
2 1/2 cup unbleached flour
Butter

In a small bowl, dissolve yeast in water. In a larger bowl, mix
together the cottage cheese, honey, butter, herbs, baking soda and
eggs. Stir in the yeast mixture. Gradually add flour to form a stiff
dough, beating well after each addition. Cover and let rise about 1
hour, or until doubled in bulk.

Stir the dough down with a spoon. Place in a well-greased 1 1/2 or 2
qt. casserole or ten 4" individual pie tins. Let rise 30 to 40
minutes, or until doubled in bulk.

Bake at 350 F. for one hour for a large loaf, or 20 to 30 minutes
for small loaves. When done, turn onto a rack, brush top(s) with
soft butter, and let cool.
Makes 1 large loaf or 10 individual dinner rolls.
