Now: why the hell would you do that with an iPhone? Presumably if you
bought an iPhone you did so because it can _replace_ your laptop in
all the contexts where you'd do something like tethering.

Not in all contexts, and not with the same functionality.

There are still plenty of places where I might want to use my laptop that don't have open network access.

My laptop is an _open_ device, capable of running a much wider universe of software. Include virtualization, and you've got the Linux and Win apps in there as well. And it has a full hardware keyboard and much larger screen. Also, it has access to hardware extensions, and much, much more local storage.
