The Aztecs never had floating gardens.  Instead they were able to control the
level of water in Lake Texcoco very precisely, so corn could be raised on
piers made of reeds.  Next year we're building a solid wooden pier, and using
the same watersprouts from fruit trees, and the same sort of moss on top of
those.  That should make it possible to grow anything, not just water-loving
plants.
