These are, of course, weeping forms of Acer japonicum var. dissectum. A certain amount of shaping is possible by aesthetic pruning...but why do all the work if you find one with a framework that appeals to you. You'll be nipping away anyway as the tree grows, but the main character of the tree can be determined at purchase.
