I'm with Branko Collin, here. Don't list the stuff you think is fair
use material. If at all, mention that the collection is copyrighted
by your professor and licensed under the foo terms, and that the work
includes material not copyrighted by your professor, full stop.

I think the way to approach this is the following:

1. How do you defend against lawyers?

2. How can you help people who make use of the rights you grant them
with the CC licenses to defend against lawyers?

For yourself, you did the right thing: You verified that to your best
knowledge all of the material not your own in fair use material. You
even went one step beyond the call of duty and licensed some of the
material you felt you needed no license for.

As to others, let them make their own informed decisions. Make sure
they know what they are getting. But remember, you help them defend
themselves, you don't defend them yourself.
