AdonAY (i.e. what looks like a plural ending) is used when God is addressed, while Adoni (singular) is a respectful term when an individual person is addressed. In modern Hebrew, for example, Adoni would be similar to 'Sir' in English (e.g. Excuse me, Sir). There are dozens of examples of both in the Bible.
