Eat with some salad or your favorite sides. ------------------------------ Ingredients (3 servings): - 200g spaghetti - 150g buna shimeji mushrooms - 4 tbsp olive oil - 1-2 cloves garlic - 1/2 cup pasta water - 3 umeboshi - 2 tbsp mirin - 2 tsp mentsuyu or soy sauce - 1/2 sheet nori - 10-15 shiso leaves Prep: 1. Cut off stems from shimeji mushrooms and separate mushrooms. 2. Remove pits from umeboshi. Scrape off excess flesh and discard pits. 3. Mince umeboshi flesh. 4. Roll up shiso leaves and chiffonade into thin strips. 5. Fold nori in half and cut into thin strips. 6. Slice garlic into slices. 7. Mix ume paste, mirin, and mentsuyu. Cook: 1. Fry garlic in oil. 2. Add mushrooms and saut?. 3. Cook pasta al dente according to package instructions. Make sure you use less salt because umeboshi is salty. 4. Add pasta water and ume paste to mushrooms. 5.
