ELDERBERRY SAUCE
MAKES ENOUGH SERVINGS FOR 10-POUND TURKEY
4 large shallots, chopped
1 tablespoon unsalted butter
1/2 pound elderberries
1/2 teaspoon ground whole pepper
3 bay leaves
1 cup port wine
2 tablespoons honey
1 quart veal stock
1 teaspoon salt
In a medium hot pan, lightly saute butter and shallots. Add elderberries,
pepper, and bay leaves. Saute another 3 minutes; add port wine and honey.
Reduce 75 percent; add veal stock and salt. Cook over low heat for 30
minutes. Remove bay leaves; puree berry mixture, strain, and serve with
turkey.
