[Market-farming] scape pricing

Richard and others,  ... am a first-time garlic grower.  When and how  
are scapes harvested?  I've read to harvest scapes while they are  
still curled (vs straight, I guess).  How much of the stem below the  
bulb is harvested?  Thanks for any suggestions that you can offer.
