Thank you all for your help.

To summarize: 1. Run chickens. (As I am in town this has its difficulties.)

Check your ordinances, it may not be difficult. I keep chickens in
town, and so do a lot of my friends. Hens are far lessy noisy than
dogs, so unless the law explicitly prohibits it, you're neighbors will
probably just think they're cute and love the eggs you give them, and
they won't complain :)

I was very apprehensive about poultry, but I am completely in love
with what they do for the soil/weeds/insects, and can't imagine a
healthy backyard ecosystem without them.

Clint;

If you would be so kind as to elaborate on just what they do, and how you let them do it?
I know I'm a couple of months behind, sorry! Busy busy...

Which leads to another question, since I just, to my complete and total surprise, and absolute delight, married a man from Texas, (hence the last year has been, well, busy....) it looks as tho my new destination for a permaculture bit of land is now central Texas, hill country, in the next few years. Has anyone recommendations for where to look for good land, who to contact for resources and the like?
Thanks for any help...

DW.
